Buttery baked trout recipe


BUTTERY BAKED TROUT

PREP TIME: 10 MINUTES

COOK TIME: 20 MINUTES

TOTAL TIME: 30 MINUTES

INGREDIENTS:

¼ cup ghee (clarified butter)

1 Tbs. organic lemon juice

2 Tbs. chopped fresh flat leaf parsley

2 8 oz. whole trout, butterflied and deboned

Sea salt and cracked black pepper to taste

INSTRUCTIONS:

Pre heat oven 400 degrees.

Melt ghee in a small saucepan over low heat until ghee smells toasted about 1 minute. Turn off heat. Line a baking sheet with parchment paper. Drizzle each trout with 2 tsp. of melted ghee. Season the fish with salt. Staple together the parchment paper around the trout so it is completely enclosed. Bake for 15 – 20 minutes or until the fish is just cooked through and flakes easily when pierced with a fork.

Serve with fresh asparagus and steamed sweet potatoes. Add remaining melted ghee and cracked black pepper to fish and vegetables.
